In addition to better samples and more velocities there is mic bleed for realistic accoustic drum recording. The OP still has not explained his specific goal or the type of drum tracks he is after. There is even a session drummer here on this forum who did some of them for Toontrack. The Toontrack midi grooves were recorded by real drummers.

I use varied velocity and try not quantize my notes 100% so that some are slightly off axis and also use the quantize function to get some swing.
